Ingredients
300g butter
300g sugar
6 eggs
300g self raising flour
1 teaspoon vanilla extract
1 teaspoon brandy
rind of 1 lemon or orange, grated (optional)

Method
1. preheat oven to 170 degrees celsius. in a large mixing bowl, cream butter and sugar until pale , yellow and fluffy.
2.beat eggs one at a time into butter mixture
3. fold in flour slowly and beat the mixture again until it is smooth and creamy
4. add vanilla extract and brandy
5. for flavoring, grated lemon or orange rind can be added
6. pour into a greased 8 inch square cake tin or into a lined cupcake tray
7. bake for 40-50 minutes or until a skewer insert in center comes out clean. baking time will be shorter if use cupcake moulds
8. remove from pan and cool on rack thoroughly before cutting
