this is a recipe from allrecipes.co.uk. but i added some flaxseed and it taste even better! Flaxseed has good source of omega and is very good for health! the recipe is pretty easy too!
Ingredients
125g butter ( i use salted butter)
150g caster sugar ( you can reduce the amount of sugar accordingly)
1 tsp vanilla extract ( i added 2 instead cos i love the vanilla flavour)
1 egg beaten
2 very ripe banana, mashed
190g self raising flour
60ml milk

Steps
- Grease and line a alb loaf tin. melt butter, sugar and vanilla in a saucepan over a medium heat ( i put in the butter first and wait until the butter is almost melted before added in the sugar as i do not want the sugar to get burnt.)
- remove from heat and add the mashed banana, mix well
- Add the egg, mix well
- Fold in the flour and flaxseed. then the milk
- Pour into the prepared tin, sprinkle with a tablespoon of demerara sugar to give a crunch topping if like ( i skip this as i do not want it to be too sweet)
- Bake at 150 C fan oven ( or 170C regular) for 1 hr ( i tried their original 35 mins but is not fully cooked so i increase to 1 hr) or until skewer comes out clean
