Batter
1. 2 tablespoon tapioca starch
2. 1/2 tablespoon of rice flour
3. 1 teaspoon of chicken soup powder
4. pinch of pepper
5. a few drops of fish sauce
6. water
Step for batter
1. Mix item 1 to 4 together and add water until the batter is even and smooth but not too watery
2. add in fish sauce and mix evenly
Ingredient
1. 1 can of straw mushroom cut into half
2. Coriander leaves, chopped
3. 1 egg (beaten)
4. 4 tablespoon of oil
the secret to good orh jian is actually the batter and oil. i experiment with a healthier version (less oil) but failed. it taste horrible. The batter also plays important part as it must be smooth, not too starchy and at the same time, it remains the "QQ" taste.

1. heat up the oil in the frying pan
2. pour in the batter and spread around the pan
3. Just before it sets completely, pour in the beaten eggs and spread it around with a spatula.
4. Add in the egg and straw mushrooms
5. cut the omelette into small pieces and cook until crispy. Add a few drops of fish sauce to enhance the taste
6. serve when hot and add in the coriander leaves
