i always wanted to do braised duck but i don't seem to find the right recipe and i always have the impression that braised duck is a lot of work lol. but my friend shared her recipe with me and i love the taste of the braised duck and best of all, it is not so complicated after all.

Duck | 1 | |
Dried Chili | 3 pieces | |
Wolfberries | 1 handful | |
Cinnamon | 2-3 pieces | |
Star anise | 2-3 pieces | |
Dang gui | 3-4 pieces | |
Chuan Xiong | 5 pieces | |
Ginger (smash abit) | 1 medium size | |
Garlic (smash abit) | 10 | |
Seasoning | ||
Dark soya sauce for taste | ||
Light soya sauce for taste | ||
Sugar | 2 tblspoon | |
Salt | 4 tsp | |
Boiling water | ||
Optional | ||
1 packet of Tau kee | ||
hard boil Eggs |
Steps | |||||||
1. Prepare the duck by removing the head, intestines and the buttock | |||||||
2. Rub the duck with salt, stuff the garlic and ginger inside the duck and left it aside for awhile | |||||||
3. Caramelize the sugar | |||||||
4. Add in the boiling water | |||||||
5. Add in the dried chiil, wolfberries,cinnamon, star anise, dang gui and chuan xiong | |||||||
6. slowly put in the duck. I am using a 40cm wok | |||||||
7. add in the dark soya sauce and light soya sauce | |||||||
8. cover the wok and let it shimmer for 15 minutes | |||||||
9. Turn the duck over and continue to shimmer it for 15 minutes | |||||||
10. continue step 8 -9 until the duck is fully cook and the meat is soft | |||||||
11. Add in the tau kee and eggs if you want. Cook the tau kee until soft and the eggs is fully braised | |||||||
12. Serve when hot |
