I used to remember when my brother and I was young, we love to eat hainanese chicken rice. those were the days where recipes are not shared and easily available. So my mum created her own version of chicken rice and we love it so much until today we keep asking for it
Ingredients (serve 4 pax)
1. 2-3 drumsticks depending on the number of people u have.
2. 1-2 cups of rice wash
3. 10 pieces of mushrooms soak and remove the stem. Cut into slices and keep the mushroom water
4. 2 -3 slices of ginger
5. 4-5 clove of garlic keep the skin
Seasoning
1. 2 tablespoon of oyster sauce
2. 1-2 tablespoon of light soya sauce
3. 1 tablespoon of sesame oil
4. 1-2 tablespoon of chinese cooking wine (shao xing wine)
Steps
1. Marinate the chicken drum stick with the seasoning for at least 2-3 hours
2. Saute ginger and garlic with oil until fragrant
3. Add in the mushrooms and stir fry it for awhile before adding the rice
4. Add in the marinated sauce from the chicken and mix evenly
5. Put everything into the rice cooker. Add in the mushroom water
6. Add enough water to cover the rice (as per normally how u cook right)
7. Add in more light soya sauce to taste. place the chicken on top of the rice and set it to cook
8. Garnish with thin slices of lettuces if you like and serve when hot
