[Recipe] Poached Chinese Spinach with Egg

This is my husband's favorite dish. He will always order it for dinner when we dine out! the only different between my version this time is only 1 type of egg instead of 3. It is quite tough to find salted eggs at NTUC and i dont really fancy century eggs. haha.



Anyway, this dish is pretty easy and quick to prepare!

Ingredients
500ml of chicken stock
1 egg
300g of Chinese spinach
1 century egg cooked and diced (optional if you do not eat it)
1 salted egg  cooked and diced (optional if you do not eat it)
1 tablespoon of chinese wine
1/2 tablespoon of light soya sauce

Steps

  1. Boil the chinese spinach and set aside ( on the serving plate)
  2. sprinkle the century egg and salted egg on top of the spinach
  3. crack the egg and spread it across the spinach 
  4. boil the chicken stock and add in the chinese wine and light soya sauce (you can add more if you feel is not salty enough)
  5. bring the stock to boil and then pour it ontop of the spinach so that the egg is lightly cook
  6. Serve when hot.
